Weekly Menu

According to Kelly is having a fun menu exchange.  Basically everyone who wants to join in submits some of their tried and true family favorite recipes and in the end we all have a plethora of yummy dinners to add to our repertoire.   Visit her sight here for more details.
So here is a weeks worth of our family favorite dinners.

Lasagna
1 lb hamburger
1-2 Tblsp Italian seasoning
1 jar pasta sauce
2 lbs shredded mozzarella
16 oz cottage cheese
1 c ricotta cheese
1/2 box lasagna noodles.
Boil noodles according to box directions. Brown hamburger, drain off oil and add seasoning.  Add jar of sauce. (if I have zucchini, peppers, or even carrots on hand I will dice them finely and add them to the meat sauce.) Mix cottage cheese and ricotta cheese together. Begin layering in 9X13 pan 1/2 the meat sauce, 1/2 noddles, 1/2 cottage cheese, and 1/2 cheese.  Repeat.  Bake 350 for 35-45min.

Chicken Enchiladas
1 lb chicken cooked and cubed (I also like to cook in crock pot with salsa and use that chicken.  You can do that in bulk and freeze it as well)
1-2 c Colby jack cheese divided
1 can cream of chicken
1 c sour cream
1 small can diced green chili's
1/4 c milk
8 tortillas
Mix all ingredients (only 1 c cheese) but tortillas.  Spoon filling into tortillas. Roll tortillas and place in 9X13 pan.  Spoon remaining filling over top and top with remaining cheese.  Bake 350 for 25 min.

Frito Pie
2 lbs hamburger cooked, drained and spiced.
1 large onion
2 cans chili beans
2 cans mild red enchilada sauce.
Add all to pot (or crock pot) and simmer 2 hrs. Then layer according to hearts desire. 
Frito's, (meat sauce) cheese, lettuce, tomato, green onion, peppers, cottage cheese (I prefer it over sour cream).  The meat sauce can also be frozen for up to 3 months.

Italian Pasta Stir Fry
8 oz linguine
1 med zucchini
1 tomato
1 med onion
1/4 c fresh chopped parsley
1 tblsp olive oil
2 cloves garlic minced
1 tblsp Italian seasoning
salt and pepper
grated Parmesan to taste.
Cook pasta according to directions. Thinly slice veggies.  Add oil to skillet on med heat. Add garlic to oil for 15 sec.  Add zucchini and onion and stir fry 2-3 min.  Add tomato parsley and seasoning, heat 1-2 min. Toss with pasta.  Top with Parmesan.

Chicken Chili Verde Soup
2 c chicken
1 chopped onion
2 cloves minced  garlic
Spade L Ranch Chicken seasoning
28 oz mild green enchilada sauce
1 can black beans
1 1/4 c frozen corn
1 tblsp fresh cilantro
Cube raw chicken and fry with onion and garlic in olive oil.  Add seasoning generously. Put in pot with  remaining ingredients and simmer 20-30 min.  Serve with tortilla chips, white cheese and sour cream.

Cream Cheese Chicken
1 lb chicken cubed
1 pkg Italian dressing mix
1 8oz pkg cream cheese
1/2c butter
Melt butter  in sauce pan, add chicken and dressing mix, stirring occasionally until chicken is cooked.  Add cream cheese and stir until mixed well.  (if to thick add a bit of milk)  Serve over rice or egg noodles. (This meal can also be frozen)

Navajo Tacos (this is my husbands fav meal, but it is not my favorite meal to cook)
Fry bread
1/2 c warm water
1 tblsp yeast
2 c milk
1 stick melted butter
1/3c sugar
1 egg
5 c flour (I often use 3 c white flour 2 c wheat flour)
Put warm water and yeast in small plastic bowl and set aside.  Mix milk, butter, egg, sugar and salt together.  Add yeast and 2 c flour.  Let sit 1 hr.  Add remaining flour (dough should be soft but not sticky).
Roll balls of dough onto floured surface about 1/4 inch thick.  Put approx 2 c oil in large frying pan and place on med heat.  When oil is hot fry dough. (dough will stay good in fridge for 5 days.  also makes great scones)
Topping
Option 1
1 lb hamburger cooked with taco seasoning
1 can chili heated
Option 2
1 lb hamburger cooked with taco seasoning.
Add 1 can corn, black beans and kidney beans (all drained of course) and heat through.

Now add other toppings of choice.  Lettuce, cheese, tomatoes, green peppers, onion, cottage cheese (or sour cream) salsa, etc.

The cream cheese chicken is definantly worth it. So easy and oh so yummy. I hope you like it as much as we do!.
